In a large non-stick skillet over medium-high heat, add the olive oil. Once hot, add chickpeas and coat with the dried oregano, smoked paprika, garlic powder, onion powder, cumin, coriander, black pepper, and cinnamon. Sauté for 5-10 minutes, stirring occasionally, until the chickpeas are lightly browned. Remove from heat.

Make the vegan tzatziki: In a small bowl, combine the vegan plain yogurt, shredded cucumber (ensure excess water is squeezed out), minced garlic, fresh dill, and white vinegar. Stir well to combine and season with salt to taste. Set aside.
