A vibrant and satisfying vegan rendition of the classic Greek gyro, featuring pan-sautéed chickpeas seasoned with aromatic spices. Served in warm pita bread with creamy hummus, fresh vegetables, and a bright, dairy-free tzatziki sauce, it's a flavor explosion.
Ingredients
- •2 Canned chickpeas (15oz each, drained and rinsed)
- •1 tbsp Olive oil
- •1 tsp Dried oregano
- •1 tsp Smoked paprika
- •1 tsp Garlic powder
- •1 tsp Onion powder
- •0.5 tsp Ground cumin
- •0.5 tsp Ground coriander
- •0.5 tsp Black pepper
- •0.3 tsp Ground cinnamon
- •0.3 tsp Salt (or to taste)
- •1 cup Vegan plain yogurt (unsweetened)
- •0.3 piece Cucumber (shredded and excess water squeezed out)
- •1 clove Garlic (minced)
- •1 tbsp Fresh dill (chopped)
- •1 tsp White vinegar
- •4 piece Pita bread
- •0.5 cup Hummus
- •2 piece Tomatoes (chopped)
- •0.5 piece Cucumber (chopped)
- •0.5 piece Red onion (thinly sliced)
Instructions
- 1
Prepare the chickpeas: Drain and rinse the canned chickpeas thoroughly, then pat them very dry with a paper towel. This helps them crisp up nicely. In a large non-stick skillet over medium-high heat, add the olive oil. Once hot, add chickpeas and coat with the dried oregano, smoked paprika, garlic powder, onion powder, cumin, coriander, black pepper, and cinnamon. Sauté for 5-10 minutes, stirring occasionally, until the chickpeas are lightly browned. Remove from heat.
- 2
Make the vegan tzatziki: In a small bowl, combine the vegan plain yogurt, shredded cucumber (ensure excess water is squeezed out), minced garlic, fresh dill, and white vinegar. Stir well to combine and season with salt to taste. Set aside.
- 3
Prepare your fresh toppings: Slice the tomatoes, the remaining half cucumber, and thinly slice the red onion. Set these aside.
- 4
Warm the pita bread: You can do this in a dry skillet over medium heat for about 1 minute per side, in a toaster, or briefly in the microwave until soft and pliable.
- 5
Assemble the gyros: Spread a generous layer of hummus on each warm pita. Spoon a portion of the seasoned chickpeas over the hummus. Top with sliced tomatoes, cucumbers, and red onion. Finish with a generous drizzle of the vegan tzatziki sauce.
Chef's Tips
- 💡Patting the chickpeas very dry is key for getting them crispy when sautéing. Don't skip this step!
- 💡For extra crunch, you can roast the chickpeas in the oven at 400°F (200°C) for 20-25 minutes after seasoning them, instead of pan-sautéing.
- 💡If you don't have fresh dill, dried dill can be used, but reduce the amount to 1 teaspoon as its flavor is more concentrated.
