  • 1 tablespoon Dijon mustard
  • 0.3 cup apple cider vinegar
  • 0.5 cup dry red wine or dark German beer (like Dunkel)
  • 4 cup beef broth, low sodium
  • 2 bay leaves
  • 6 juniper berries, lightly crushed
  • 3 fresh thyme sprigs
  • 1.5 lb potatoes, peeled and cut into 1.5-inch chunks

    Preheat oven to 325°F (160°C). Pat the beef cubes dry with paper towels. In a shallow dish, combine the flour, salt, and pepper. Dredge the beef cubes in the flour mixture, shaking off any excess.

    Heat vegetable oil or lard in a large Dutch oven or oven-safe pot over medium-high heat. Brown the beef in batches, ensuring not to overcrowd the pot. Brown on all sides until a deep crust forms, about 3-4 minutes per batch. Remove browned beef to a plate and set aside.
