  • 1 lb Ground Pork (or ground chicken, turkey, or beef)
  • 1 block Extra-Firm Tofu (14-16 oz, pressed and cut into 1/2-inch cubes)
  • 1 large head Broccoli (cut into small florets, about 4-5 cups)
  • 2 tbsp Vegetable Oil (divided)
  • 3 cloves Garlic (minced)
  • 1 tbsp Fresh Ginger (grated)
  • 1 cup Soy Sauce (low sodium preferred)
  • 1.5 tbsp Rice Vinegar
  • 1.5 tbsp Brown Sugar (or honey)
  • 1.5 tsp Sesame Oil
  • 1.5 tbsp Cornstarch
  • 1 cup Water or Chicken Broth
  • 4 cups Cooked Rice or Noodles (for serving)
  • 2 stalks Green Onions (sliced, for garnish (optional))
  • 1 tsp Toasted Sesame Seeds (for garnish (optional))

Instructions

    Prepare the sauce: In a small bowl, whisk together the soy sauce, rice vinegar, brown sugar, sesame oil, cornstarch, and water or chicken broth until smooth. Set aside.

    Press the extra-firm tofu for at least 15-20 minutes (or longer if possible) to remove excess water. Cut the pressed tofu into 1/2-inch cubes. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the tofu cubes and cook, stirring occasionally, until golden brown and slightly crispy on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.

    Add the remaining 1 tablespoon of vegetable oil to the same skillet (add more if needed). Add the ground pork and cook, breaking it up with a spoon, until it's browned and cooked through, about 5-7 minutes. Drain any excess grease.

    Add the minced garlic and grated ginger to the skillet with the pork. Cook for 1 minute until fragrant, stirring constantly.

    Add the broccoli florets and the cooked tofu cubes to the skillet. Stir-fry for 3-5 minutes, until the broccoli is tender-crisp. If it seems too dry, you can add a tablespoon or two of water to help it steam slightly.

    Give the prepared sauce another quick whisk and then pour it over the pork, tofu, and broccoli. Bring to a simmer, stirring constantly, and cook for 1-2 minutes until the sauce thickens and coats everything nicely.

    Remove from heat. Serve immediately over steamed rice or noodles. Garnish with sliced green onions and toasted sesame seeds, if desired.
