Ingredients

Servings:
8
  • 3 piece Ripe bananas (about 300g, mashed)
  • 55 g Unsalted butter (about 4 tablespoons)
  • 60 Olive oil or vegetable oil (about 1/4 cup)
  • 95 Brown sugar, packed (about 1/2 cup)
  • 40 Granulated sugar (about 3 tablespoons)
  • 2 piece Large eggs
  • 40 Plain yogurt (about 2 tablespoons)
  • 240 g All-purpose flour (about 2 cups)
  • 1 tsp Salt
  • 1 tsp Baking soda
  • 1 tsp Ground cinnamon
  • 150 Toppings (chocolate chips, walnuts, almonds, or raisins) (about 1 cup)

Instructions

  1. 1

Preheat your oven to 180°C (350°F). Grease and flour a 20 x 11 cm (approx. 8 x 4.3 inch) loaf pan, or line with parchment paper. Mash the ripe bananas in a medium bowl until mostly smooth, with a few small lumps remaining.

  2. 2

In a small saucepan, melt the unsalted butter over medium heat. Continue cooking, swirling occasionally, until the butter turns amber in color and nutty brown bits form at the bottom of the pan. This usually takes 3-5 minutes. Immediately remove from heat and pour into a heatproof bowl to stop cooking. Stir in the olive oil or vegetable oil.

  3. 3

In a large bowl, whisk together the mashed bananas, brown sugar, granulated sugar, eggs, and plain yogurt until well combined. Pour in the browned butter and oil mixture, stirring until fully incorporated.

  4. 4

In a separate medium bowl, whisk together the all-purpose flour, salt, baking soda, and ground cinnamon.

  5. 5

Gradually add the dry ingredients to the wet ingredients, mixing gently with a spatula or wooden spoon until just combined. Be careful not to overmix; a few streaks of flour are fine. Fold in your chosen toppings (chocolate chips, walnuts, etc.).

  6. 6

Pour the batter into the prepared loaf pan and spread evenly. Bake for 55-60 minutes, or until a wooden skewer inserted into the center comes out clean.

  7. 7

Once baked, remove the banana bread from the oven and let it cool in the pan for 10-15 minutes before carefully transferring it to a wire rack to cool completely. Slice and serve!

Chef's Tips

  • 💡Ensure your bananas are very ripe (with lots of brown spots) for the best flavor and natural sweetness.
  • 💡Do not overmix the batter; overmixing can lead to a tough banana bread. Mix until just combined.
  • 💡You can customize your toppings! Chocolate chips, chopped walnuts, pecans, or even a mix of dried fruits work wonderfully.
  • 💡For extra flavor, sprinkle a little turbinado sugar on top before baking for a nice crunchy crust.
