Brown Butter Banana Bread

Ingredients

- •55 g Unsalted butter (about 4 tablespoons)
- •60 g Olive oil or vegetable oil (about 1/4 cup)
- •95 g Brown sugar, packed (about 1/2 cup)
- •40 g Granulated sugar (about 3 tablespoons)
- •2 piece Large eggs
- •40 g Plain yogurt (about 2 tablespoons)
- •240 g All-purpose flour (about 2 cups)
- •1/2 tsp Salt
- •1 tsp Baking soda
- •1/2 tsp Ground cinnamon
- •150 g Toppings (chocolate chips, walnuts, almonds, or raisins) (about 1 cup)
Instructions

Preheat your oven to 180°C (350°F). Grease and flour a 20 x 11 cm (approx. 8 x 4.3 inch) loaf pan, or line with parchment paper. Mash the ripe bananas in a medium bowl until mostly smooth, with a few small lumps remaining.
Time: 5 min - 2.
In a small saucepan, melt the unsalted butter over medium heat. Continue cooking, swirling occasionally, until the butter turns amber in color and nutty brown bits form at the bottom of the pan. This usually takes 3-5 minutes. Immediately remove from heat and pour into a heatproof bowl to stop cooking. Stir in the olive oil or vegetable oil.

In a large bowl, whisk together the mashed bananas, brown sugar, granulated sugar, eggs, and plain yogurt until well combined. Pour in the browned butter and oil mixture, stirring until fully incorporated.

In a separate medium bowl, whisk together the all-purpose flour, salt, baking soda, and ground cinnamon.
