Ingredients
- 1 sheet frozen puff pastry, thawed
- 2 cups whole milk
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 4 large egg yolks
- 2 tablespoons unsalted butter
- 2 teaspoons vanilla extract
- Powdered sugar, for dusting
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Roll out puff pastry to a 10×10-inch square. Place on baking sheet and prick all over with a fork. Bake for 15–18 minutes, until golden and crisp. Cool completely, then cut into 2 equal squares.
- In a saucepan, whisk together milk, sugar, and cornstarch. Cook over medium heat, whisking constantly, until mixture thickens and just begins to bubble.
- In a bowl, whisk egg yolks. Gradually whisk in a little hot milk mixture to temper, then return all to saucepan.
- Cook, whisking, until thick and smooth, about 2 minutes. Remove from heat and stir in butter and vanilla.
- Place one pastry square in an 8×8-inch pan. Spread custard evenly over pastry. Top with second pastry square.
- Chill for at least 2 hours. Dust with powdered sugar before slicing into 9 squares and serving.
Tips
- For a twist, add a layer of fresh berries between the custard and top pastry.
- Use a serrated knife to slice cleanly through the pastry and custard.
