Ingredients

Servings:
4
  • 1 tbsp Olive oil
  • 3 cloves Garlic (minced)
  • 28 oz Canned crushed tomatoes (1 large can)
  • 2 cups Vegetable broth (low sodium preferred)
  • 1 cup Your favorite salsa (mild, medium, or hot)
  • 1 tsp Sugar (or to taste, balances acidity)
  • 0.5 tsp Salt (or to taste)
  • 0.3 tsp Black pepper (or to taste)
  • 0.5 cup Heavy cream (optional, for extra richness and creaminess)
  • 0.3 cup Fresh basil (chopped, for garnish)

Instructions

  1. 1

In a small saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

  2. 2

Pour the sautéed garlic and oil into your Vitamix blender. Add the crushed tomatoes, vegetable broth, salsa, sugar, salt, and black pepper to the blender.

  3. 3

Secure the lid and select the 'Hot Soup' program if your Vitamix has one, or start on a low speed and gradually increase to high. Blend for 5-7 minutes, or until the soup is completely smooth and steaming hot. The friction from the blades will heat the soup.

  4. 4

Carefully remove the lid (steam will escape). If using, pour in the heavy cream and blend for another 15-30 seconds until fully incorporated and creamy.

  5. 5

Taste and adjust seasonings if necessary. Ladle the hot soup into bowls and garnish with fresh chopped basil before serving.

Chef's Tips

  • 💡For an even richer flavor, you can roast the garlic cloves whole with a drizzle of olive oil before mincing and adding to the soup.
  • 💡If you prefer a dairy-free option, substitute the heavy cream with full-fat coconut milk or 1/2 cup of soaked cashews (soaked in hot water for 30 minutes, then drained) added to the blender with the other ingredients.
  • 💡Serve with crispy tortilla strips, a dollop of sour cream or Greek yogurt, or grilled cheese sandwiches for a complete meal.
