- •0.5 tsp Salt (or to taste)
- •0.3 tsp Black pepper (or to taste)
- •0.5 cup Heavy cream (optional, for extra richness and creaminess)
- •0.3 cup Fresh basil (chopped, for garnish)

In a small saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Pour the sautéed garlic and oil into your Vitamix blender. Add the crushed tomatoes, vegetable broth, salsa, sugar, salt, and black pepper to the blender.

Secure the lid and select the 'Hot Soup' program if your Vitamix has one, or start on a low speed and gradually increase to high. Blend for 5-7 minutes, or until the soup is completely smooth and steaming hot. The friction from the blades will heat the soup.

Carefully remove the lid (steam will escape). If using, pour in the heavy cream and blend for another 15-30 seconds until fully incorporated and creamy.
