  • 2 cup water
  • 1 piece (2x2 inch), optional kombu (dried kelp)
  • 0.3 cup rice vinegar
  • 2 tablespoon granulated sugar

    Wash the rice: Place the sushi rice in a large bowl and add cold water. Swirl the rice gently with your hand, then drain the cloudy water. Repeat this process 5-7 times until the water runs mostly clear. This removes excess starch.

    Soak the rice: Drain the washed rice completely and let it sit in a sieve or colander for 30 minutes to an hour. This allows the rice grains to absorb some moisture evenly before cooking.

    Cook the rice: Transfer the soaked rice to a heavy-bottomed pot with a tight-fitting lid. Add 2 cups of fresh cold water and the optional kombu. Bring to a boil over medium-high heat. Once boiling, reduce the heat to the lowest setting, cover tightly, and simmer for 15 minutes without lifting the lid.

    Steam the rice: After 15 minutes, remove the pot from the heat but keep the lid on. Let the rice steam for another 10-15 minutes. This allows the rice to finish cooking with residual heat and become fluffy.

    Prepare the sushi vinegar (awasezu): While the rice is steaming, combine the rice vinegar, sugar, and salt in a small saucepan. Heat over low heat, stirring constantly, until the sugar and salt are completely dissolved. Do not boil. Remove from heat and let cool to room temperature.

    Season the rice: Once the rice is steamed, remove the kombu. Transfer the hot rice immediately to a large, wide, non-metallic bowl, preferably a hangiri (wooden sushi rice tub). Spread the rice evenly.

    Mix the vinegar: Slowly pour the cooled sushi vinegar mixture evenly over the rice. Using a rice paddle or wooden spoon, gently fold and cut through the rice with a diagonal motion, trying not to mash the grains. Simultaneously, fan the rice with a hand fan or a piece of cardboard to cool it down quickly. This process gives the rice its characteristic glossy texture and helps the vinegar absorb evenly.

    Cool and serve: Continue folding and fanning until the rice is shiny, fluffy, and cooled to approximately body temperature. Cover the seasoned sushi rice with a damp cloth or plastic wrap to prevent it from drying out until ready to use for making sushi.
