  • 1 lb Beef sirloin or flank steak (thinly sliced against the grain into 1/4-inch strips)

  • 1 tbsp Paprika (sweet or smoked)
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Ground ginger
  • 1 tsp Salt
  • 2 tbsp Vegetable oil
  • 8 piece Wooden skewers (soaked in water for at least 30 minutes if using)
  • 1 piece Red onion (thinly sliced, for serving)

Instructions

    If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill. Prepare your Suya spice blend (Yaji): In a medium bowl, combine the ground roasted peanuts, cayenne pepper, paprika, garlic powder, onion powder, ground ginger, and salt. Mix well until everything is evenly distributed.

    In a separate bowl, toss the thinly sliced beef with 1 tablespoon of vegetable oil. This helps the spice blend adhere better. Add half of the prepared Suya spice blend to the beef and toss until every piece is thoroughly coated.

    Thread the seasoned beef strips onto the soaked skewers. You can pleat them accordion-style or simply thread them on individually. Do not overcrowd the skewers.
