  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1.5 cup brown or green lentils, rinsed
  • 6 cup vegetable broth
  • 14.5 oz diced tomatoes, undrained
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon smoked paprika (optional)

  • to taste black pepper, freshly ground
  • 1 tablespoon red wine vinegar or lemon juice
  • 0.3 cup fresh parsley, chopped

Instructions

    Heat olive oil in a large pot or Dutch oven over medium heat. Add the diced onion, carrots, and celery. Sauté for 5-7 minutes, stirring occasionally, until the vegetables begin to soften.

    Add the minced garlic, dried thyme, ground cumin, and smoked paprika (if using). Cook for 1 minute more, stirring constantly, until fragrant.
