Ingredients

Servings:
1
  • 0.5 cup White rice (uncooked)
  • 0.3 tsp Salt (to taste, for shaping)
  • 0.5 cup Water (for cooking rice, or as per rice cooker instructions)
  • 1 piece Bamboo skin (Take-kawa) (for authentic presentation, optional)

Instructions

  1. 1

Wash the white rice thoroughly until the water runs clear. Let it soak in water for at least 30 minutes, or up to an hour, for best texture.

  2. 2

Drain the soaked rice and cook it using your preferred method (rice cooker or stovetop) with 0.5 cup of fresh water. Once cooked, let it rest for 5-10 minutes, then gently fluff the rice with a spatula.

  3. 3

While the rice is still warm, prepare your hands. Wet your hands lightly with water to prevent sticking, and sprinkle a generous pinch of salt evenly over your palms.

  4. 4

Take about half of the warm, cooked rice and gently, but firmly, shape it into a triangle using both hands. The traditional method involves light pressure, rotating and pressing each side to form the shape. As you press, infuse it with care and positive thoughts, just like Haku did!

  5. 5

If using, carefully wrap the shaped rice ball in a piece of bamboo skin for a traditional, movie-accurate look and to keep it fresh.

Chef's Tips

  • 💡Using freshly cooked, warm rice is key for the best texture and ease of shaping.
  • 💡Don't press the rice too hard; a gentle but firm touch will keep the rice fluffy inside while holding its shape.
  • 💡Experiment with the amount of salt on your hands to find your preferred level of seasoning. Some like a subtle hint, others prefer a bit more kick.

Doro Wat (Ethiopian Chicken Stew)

Doro Wat is Ethiopia's national dish, a rich, spicy, and deeply flavorful chicken stew. It features tender chicken drumsticks and thighs simmered in a thick, aromatic sauce made from finely chopped red onions, niter kibbeh (Ethiopian spiced clarified butter), and a generous amount of berbere spice blend, traditionally served with hard-boiled eggs and injera.

Trouble Coffee Cinnamon Toast

Trouble Coffee Cinnamon Toast

There was once an incredible coffes shop in the Outer Sunset called Trouble Coffee. They had cinnamon bread that was exquisite. This recipe is my humble attempt to recreate the spirit of that iconic cinnamon toast, focusing on a quick toasting method followed by a generous application of softened butter and a simple, aromatic cinnamon, sugar, and cardamom topping. I'm not sure if they used brioche, challah or something else, but I keep hoping I'll run into someone who knows.
