  • 1 cup peanut butter
  • 2 tbsp honey
  • 1 cup coconut or almond flour (or part protein powder)
  • 100 sugar-free dark chocolate
  • 2 tbsp peanut butter (for chocolate coating)

Instructions

    Make the dough — Mix peanut butter, honey and flour in a bowl until a firm dough forms. If too sticky, add a little more flour.

    Shape the balls — Roll into small balls and place on a tray lined with parchment paper. Freeze for 15 minutes.

    Melt the chocolate — Melt dark chocolate with 2 tbsp peanut butter in a double boiler or microwave in 30-second intervals, stirring between each.

    Coat and set — Dip each ball into the chocolate mixture and place back on the tray. Refrigerate until the chocolate sets.
