  • •1.5 cup canned crushed tomatoes or tomato passata
  • •0.8 cup heavy cream
  • •1 teaspoon granulated sugar or honey
  • •1 tablespoon kasuri methi (dried fenugreek leaves), crushed between palms
  • •0.5 cup frozen green peas (optional)
  • •1 all-butter puff pastry sheet, thawed but cold
  • •1 large egg, beaten with 1 teaspoon water for egg wash
  • •1 teaspoon nigella seeds or black sesame seeds (for garnish)

Instructions

    In a medium bowl, combine the diced chicken with yogurt, lemon juice, half of the grated garlic, half of the grated ginger, 1 teaspoon Kashmiri chili powder, 0.5 teaspoon garam masala, 0.5 teaspoon cumin, turmeric, and 0.5 teaspoon salt. Marinate for at least 20 minutes (or refrigerate up to 4 hours).

    Melt 2 tablespoons of butter in a large skillet or Dutch oven over medium-high heat. Add the marinated chicken in a single layer (shake off excess marinade) and sear for 5-6 minutes until browned on the edges. Remove chicken and set aside on a plate (it does not need to be fully cooked through).

    In the same skillet, melt the remaining 2 tablespoons of butter over medium heat. Add the diced onion and cook for 6-8 minutes until soft and golden. Add the remaining garlic and ginger, cooking for 1 minute until fragrant.

    Reduce the heat to low. Stir in the heavy cream, sugar, crushed kasuri methi, and frozen peas (if using). Return the seared chicken along with any accumulated juices into the sauce. Simmer for 3-4 minutes to allow flavors to meld. Remove from heat and let the filling cool slightly so it doesn't melt the raw pastry immediately.

    Preheat your oven to 400°F (200°C). Divide the warm chicken filling evenly between four 12-ounce oven-safe ramekins (or transfer all filling into one 9-inch deep-dish pie dish).

Place the pastry over the ramekins, pressing down the edges gently around the rim to seal. Cut two small slits in the center of each pastry top for steam vents.
