Ingredients
- •1 lb Boneless, skinless chicken thighs or breasts (cut into 1-inch pieces)
- •1 block Extra-firm tofu (14 oz, pressed and cut into 1-inch cubes)
- •1 cup Store-bought teriyaki sauce (or to taste)
- •1 tbsp Vegetable oil
- •4 cup Cooked white rice (hot, for serving)
- •1 tsp Sesame seeds (for garnish)
- •2 stalks Green onions (sliced, for garnish (optional))
- •2 cup Steamed broccoli or edamame (for serving (optional))
Instructions
- 1
Prepare and Cook Tofu: Gently press the extra-firm tofu to remove excess water, then cut into 1-inch cubes. Heat 1/2 tbsp of the vegetable oil in a large skillet or wok over medium-high heat. Add the tofu cubes and cook for 5-7 minutes, turning occasionally, until golden brown and slightly crispy. Remove the tofu from the skillet and set aside.
- 2
Cook the Chicken: Add the remaining 1/2 tbsp vegetable oil to the same skillet. Add the chicken pieces and cook for 5-7 minutes, stirring occasionally, until browned on all sides and mostly cooked through.
- 3
Combine and Sauce: Return the cooked tofu to the skillet with the chicken. Pour the store-bought teriyaki sauce over the chicken and tofu. Bring to a simmer, then reduce heat to medium-low and let it cook for 2-3 minutes, allowing the sauce to coat everything thoroughly.
- 4
Assemble the Bowls: Divide the hot cooked rice among four bowls. Spoon the chicken, tofu, and plenty of teriyaki sauce over the rice. Garnish with sesame seeds and sliced green onions (if using). Serve immediately, with steamed broccoli or edamame on the side if desired.
Chef's Tips
- 💡For even faster prep, buy pre-cut chicken or pre-pressed/cubed tofu. You can also use pre-cooked rice packets that heat up in minutes.
- 💡If your teriyaki sauce seems a little thin, you can whisk 1 teaspoon of cornstarch with 1 tablespoon of cold water to create a slurry and stir it into the simmering sauce for a minute or two to thicken.
- 💡Let your son help sprinkle the sesame seeds or arrange the chicken, tofu, and veggies in the bowl for a fun, interactive dinner.
- 💡Don't overcook the chicken or tofu! They should be tender and juicy (chicken) and crispy yet tender (tofu). The sauce will continue to thicken slightly as it cools.
