- •4 oz Feta Cheese (Crumbled, for garnish)
- •8 piece Corn Tortillas
- •2 tbsp Olive Oil
Instructions
- 1
Heat olive oil in a large skillet over medium-high heat. Add ground pork and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
- 2
Transfer the browned ground pork to a slow cooker.
- 3
Add the chopped onion and minced garlic to the slow cooker.
- 4
Pour in the diced tomatoes (with their juices), chicken broth, lemon juice, and lemon zest.
- 5
Stir in the dried oregano, bay leaf, salt, and pepper.
- 6
Cover and cook on low for 6 hours or on high for 3 hours.
- 7
About 30 minutes before serving, stir in the chopped spinach. Allow it to wilt into the stew.
- 8
While the spinach is wilting, prepare the tortilla strips. Preheat oven to 375°F (190°C). Cut the tortillas into thin strips.
🌡️ 375°F - 9
Toss the tortilla strips with a little olive oil, salt, and pepper. Spread them in a single layer on a baking sheet.
- 10
Bake for 8-10 minutes, or until golden brown and crispy. Alternatively, air fry at 350F for 5-7 minutes.
🌡️ 375°F - 11
Remove the bay leaf from the stew before serving.
- 12
Ladle the stew into bowls. Garnish with crumbled feta cheese and crispy tortilla strips.
Chef's Tips
- 💡For a richer flavor, you can brown the ground pork with the onions and garlic before adding it to the slow cooker.
- 💡If you don't have fresh spinach, you can use frozen spinach. Thaw it and squeeze out any excess water before adding it to the stew.
- 💡Adjust the amount of lemon juice and zest to your liking. Some people prefer a more pronounced lemon flavor.
- 💡If you like a bit of heat, add a pinch of red pepper flakes to the stew.
- 💡Serve with a dollop of Greek yogurt or sour cream for extra creaminess.
