Slow Cooker Greek Ground Pork Stew with Crispy Tortilla Strips

- •28 oz Canned Diced Tomatoes (Undrained)
- •3 cups Chicken Broth (Low sodium)
- •1/4 cup Lemon Juice (Freshly squeezed)
- •2 tbsp Lemon Zest (From about 2 lemons)
- •2 tsp Dried Oregano
- •1 piece Bay Leaf
- •1 tsp Salt (Or to taste)
- •1/2 tsp Black Pepper (Or to taste)
- •8 oz Spinach (Fresh, roughly chopped)
- •4 oz Feta Cheese (Crumbled, for garnish)
- •8 piece Corn Tortillas

Instructions

Heat olive oil in a large skillet over medium-high heat. Add ground pork and cook, breaking it up with a spoon, until browned. Drain off any excess grease.

Transfer the browned ground pork to a slow cooker.

Add the chopped onion and minced garlic to the slow cooker.
