  • 2 large Roma tomatoes, deseeded and cut into 1/2-inch thick wedges
  • 1 tablespoon aji amarillo paste
  • 0.3 cup soy sauce
  • 2 tablespoon red wine vinegar
  • 0.3 cup fresh cilantro, chopped
  • 2 stalks green onions, sliced (for garnish, optional)
  • 4 cup cooked white rice, for serving
