Using a large, sharp knife, slice the cauliflower from top to bottom into 1-inch thick 'steaks.' You should get 2-3 good steaks from the center. Don't worry if some pieces break off; you can roast them alongside the steaks.

In a small microwave-safe bowl or saucepan, melt the vegan butter. Stir in the minced garlic, chopped fresh parsley, lemon juice, smoked paprika, salt, and pepper.
