Ingredients
- •1 lb Sirloin or Top Round Steak (cut into 1-inch cubes)
- •14 oz Extra-Firm Tofu (pressed and cut into 1-inch cubes)
- •1 piece Red Bell Pepper (cut into 1-inch pieces)
- •1 piece Green Bell Pepper (cut into 1-inch pieces)
- •1 piece Zucchini (medium, cut into 1/2-inch thick half-moons)
- •1 piece Red Onion (medium, cut into 1-inch pieces)
- •8 oz Cremini or Button Mushrooms (whole or halved if large)
- •1 cup Cherry Tomatoes (optional)
- •1 cup Olive Oil
- •2 tbsp Lemon Juice
- •3 clove Garlic (minced)
- •1 tsp Dried Oregano
- •1 tsp Dried Thyme
- •1 tsp Salt (or to taste)
- •1 tsp Black Pepper (freshly ground, or to taste)
- •8 piece Wooden Skewers (soaked in water for 30 minutes if using)
Instructions
- 1
In a large bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, dried thyme, salt, and black pepper to create the marinade.
- 2
Add the cubed steak, pressed tofu, chopped bell peppers, zucchini, red onion, and mushrooms to the marinade bowl. Toss gently to ensure all pieces are well coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours, to allow the flavors to meld.
- 3
Preheat your grill to medium-high heat (about 400-450°F or 200-230°C). If using wooden skewers, ensure they have been soaked in water for at least 30 minutes to prevent burning.
- 4
Thread the marinated steak, tofu, and vegetables alternately onto the skewers. Try to distribute the ingredients evenly among 8-10 skewers. If using cherry tomatoes, add them last or near the end.
- 5
Place the skewers on the preheated grill. Grill for 10-15 minutes, turning occasionally, until the steak reaches your desired doneness (medium-rare to medium is usually 130-140°F internal temperature), the tofu is golden and slightly charred, and the vegetables are tender-crisp and slightly charred.
- 6
Remove the skewers from the grill and let them rest for a few minutes before serving. Garnish with fresh parsley or a sprinkle of paprika if desired.
Chef's Tips
- 💡To ensure even cooking, try to cut all the steak, tofu, and vegetable pieces to a similar size.
- 💡Don't overcrowd the skewers. Leave a little space between the pieces for the heat to circulate.
- 💡For extra flavor, squeeze a little fresh lemon juice over the cooked skewers before serving.
- 💡Make sure to press your tofu thoroughly before marinating to allow it to absorb maximum flavor and achieve a better texture when grilled.
