- •2 tablespoons Fresh Lemon Juice
- •2 tablespoons, chopped, for garnish Fresh Dill or Parsley

Heat olive oil in a large pot or Dutch oven over medium heat. Add the ground chicken and cook, breaking it up with a spoon, until browned and no longer pink, about 5-7 minutes. Drain any excess fat and set the chicken aside.

In the same pot, add the diced onion, carrots, and celery. Sauté for 5-7 minutes, until the vegetables begin to soften.
