Creamy Miso-Tahini Dressing
A versatile and flavorful dressing made with miso, tahini, lemon juice, and ginger, ideal for salads or grain bowls.
Ingredients
- •2 tablespoons White Miso Paste
- •1 cup Tahini
- •2 tablespoons Fresh Lemon Juice
- •1 teaspoon Fresh Ginger (finely grated)
- •3 tablespoons Water (adjust to desired consistency)
- •1 tablespoon Rice Vinegar
- •1 teaspoon Maple Syrup (optional, or honey)
- •1 teaspoon Soy Sauce (or tamari for gluten-free)
- •1 clove Garlic (minced, optional)
- •Pinch Salt (to taste, optional)
- •Pinch Black Pepper (freshly ground, optional)
Instructions
- 1
If using, finely grate the fresh ginger and mince the garlic clove.
- 2
In a medium mixing bowl, combine the white miso paste, tahini, fresh lemon juice, grated ginger, rice vinegar, maple syrup (if using), soy sauce, and minced garlic (if using).
- 3
Whisk all ingredients vigorously until the mixture is well combined and relatively smooth. It will be quite thick at this stage.
- 4
Gradually add the water, one tablespoon at a time, whisking continuously after each addition. Continue adding water until your desired creamy and pourable consistency is achieved. You may need more or less water depending on the thickness of your tahini and miso.
- 5
Taste the dressing and adjust seasonings as needed. Add more lemon juice for extra tang, maple syrup for more sweetness, soy sauce for additional umami and saltiness, or a pinch of salt and pepper to taste.
- 6
Serve immediately over salads, grain bowls, roasted vegetables, or as a dipping sauce. Store any leftover dressing in an airtight container in the refrigerator.
Chef's Tips
- 💡For a thinner dressing, add more water, a teaspoon at a time, until the desired consistency is reached. For a thicker sauce, use less water.
- 💡This dressing can be stored in an airtight container in the refrigerator for up to 5-7 days. Whisk well before each use as it may thicken slightly when chilled.
- 💡Experiment with variations: add a dash of toasted sesame oil for a deeper nutty flavor, a pinch of cayenne pepper for a subtle kick, or finely chopped fresh cilantro for an herbal note.
- 💡Beyond salads, this dressing is excellent drizzled over grilled chicken or fish, as a spread in sandwiches or wraps, or mixed into cold noodle dishes.

Trouble Coffee Cinnamon Toast
There was once an incredible coffes shop in the Outer Sunset called Trouble Coffee. They had cinnamon bread that was exquisite. This recipe is my humble attempt to recreate the spirit of that iconic cinnamon toast, focusing on a quick toasting method followed by a generous application of softened butter and a simple, aromatic cinnamon, sugar, and cardamom topping. I'm not sure if they used brioche, challah or something else, but I keep hoping I'll run into someone who knows.
