  • 2 cups All-purpose flour
  • 1 tsp Baking soda
  • 1 tsp Ground cinnamon
  • 1 tsp Ground nutmeg
  • 1 tsp Salt
  • 2 piece Eggs (large)
  • 1 cup Granulated sugar
  • 1 cup Vegetable oil
  • 1 tsp Vanilla extract
  • 1 cups Shredded carrots (packed)

Instructions

Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.

    🌡️ 350°F
  2. 2

In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.

  3. 3

In a separate bowl, beat the eggs and sugar until light and fluffy. Gradually add the oil and vanilla extract, mixing until well combined.

  4. 4

Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.

  5. 5

Fold in the shredded carrots and nuts (if using).

  6. 6

Pour the batter into the prepared loaf pan and spread evenly.

  7. 7

Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, cover loosely with foil.

  8. 8

Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Chef's Tips

  • 💡For extra flavor, toast the nuts before adding them to the batter.
  • 💡Store the bread in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
  • 💡Add raisins or other dried fruits for a sweeter bread.
