    Rinse the basmati rice under cold running water several times until the water runs clear. Soak the rinsed rice in 3 cups of fresh water for 15-20 minutes. After soaking, drain the rice thoroughly and set aside.

    Heat the ghee or vegetable oil in a heavy-bottomed pot or a pressure cooker over medium heat. Once hot, add the whole cumin seeds. Let them sizzle and turn fragrant, about 30-60 seconds. Be careful not to burn them.

    If using, add the finely sliced onion and green chili to the pot. Sauté until the onion turns translucent, about 3-5 minutes.
