Zucchini Noodle Primavera is a fresh, healthy, and colorful dish that’s perfect for a light lunch or dinner. Spiralized zucchini noodles are tossed with a medley of sautéed vegetables and finished with lemon juice and fresh basil. It’s a vibrant, veggie-packed meal that’s both satisfying and easy to make!

Ingredients:

  • 4 medium zucchini, spiralized into noodles
  • 1 tablespoon olive oil
  • 1/2 red onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup broccoli florets
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried Italian seasoning
  • 1/4 cup grated Parmesan cheese (optional, omit for vegan)
  • 2 tablespoons chopped fresh basil
  • 1 tablespoon lemon juice

Instructions:

  1. Heat olive oil in a large skillet over medium heat. Add red onion, bell peppers, and broccoli. Sauté for 3-4 minutes until vegetables begin to soften.
  2. Add garlic and cherry tomatoes. Cook for another 2 minutes, stirring frequently.
  3. Add zucchini noodles, salt, black pepper, and Italian seasoning. Toss gently and cook for 2-3 minutes, just until zucchini noodles are tender but not mushy.
  4. Remove from heat. Stir in lemon juice and fresh basil.
  5. Serve immediately, topped with grated Parmesan cheese if desired.
