Zesty Lemon Chicken Skillet

This Zesty Lemon Chicken Skillet is a vibrant, flavorful dish that’s perfect for a quick weeknight dinner or a special occasion. Tender chicken breasts are cooked to golden perfection and simmered in a tangy lemon sauce with garlic, oregano, and a touch of heat. Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1/3 cup fresh lemon juice (about 2 lemons)
  • 1 tablespoon lemon zest
  • 1 teaspoon dried oregano
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 2 tablespoons capers, drained (optional)
  • 2 tablespoons chopped fresh parsley
  • Lemon slices, for garnish

Instructions:

  1. In a shallow dish, combine flour, salt, and black pepper. Dredge each chicken breast in the flour mixture, shaking off excess.
  2. Heat olive oil and butter in a large skillet over medium-high heat. Add chicken breasts and cook for 4-5 minutes per side, until golden brown and cooked through. Remove chicken and set aside.
  3. In the same skillet, add garlic and sauté for 30 seconds until fragrant.
  4. Pour in chicken broth, lemon juice, lemon zest, oregano, and red pepper flakes (if using). Stir, scraping up any browned bits from the pan.
  5. Bring to a simmer and cook for 2-3 minutes to reduce slightly.
  6. Return chicken to the skillet, spooning sauce over the top. Add capers if desired.
  7. Simmer for another 2-3 minutes until chicken is heated through and sauce thickens slightly.
  8. Garnish with chopped parsley and lemon slices. Serve hot.
