Ingredients:
- 4 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 cup low-sodium chicken broth
- 1/3 cup fresh lemon juice (about 2 lemons)
- 1 tablespoon lemon zest
- 1 teaspoon dried oregano
- 1/2 teaspoon crushed red pepper flakes (optional)
- 2 tablespoons capers, drained (optional)
- 2 tablespoons chopped fresh parsley
- Lemon slices, for garnish
Instructions:
- In a shallow dish, combine flour, salt, and black pepper. Dredge each chicken breast in the flour mixture, shaking off excess.
- Heat olive oil and butter in a large skillet over medium-high heat. Add chicken breasts and cook for 4-5 minutes per side, until golden brown and cooked through. Remove chicken and set aside.
- In the same skillet, add garlic and sauté for 30 seconds until fragrant.
- Pour in chicken broth, lemon juice, lemon zest, oregano, and red pepper flakes (if using). Stir, scraping up any browned bits from the pan.
- Bring to a simmer and cook for 2-3 minutes to reduce slightly.
- Return chicken to the skillet, spooning sauce over the top. Add capers if desired.
- Simmer for another 2-3 minutes until chicken is heated through and sauce thickens slightly.
- Garnish with chopped parsley and lemon slices. Serve hot.
