Ingredients

  • 1 whole chicken (about 3.5–4 lbs), spatchcocked or cut into pieces
  • 3 tablespoons za’atar spice blend
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice (about 1/2 lemon)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 4 garlic cloves, minced
  • 1 large onion, sliced
  • 1 lemon, sliced into rounds
  • Fresh parsley, for garnish (optional)

Instructions

  1. Prepare the Marinade: In a small bowl, mix together the za’atar, olive oil, lemon juice, salt, pepper, and minced garlic to form a paste.
  2. Marinate the Chicken: Pat the chicken dry with paper towels. Rub the za’atar marinade all over the chicken, making sure to get under the skin and inside any cavities. Let marinate for at least 30 minutes (up to overnight in the refrigerator for best flavor).
  3. Preheat Oven: Preheat your oven to 425°F (220°C).
  4. Prepare the Pan: Arrange the sliced onion and lemon rounds on the bottom of a large roasting pan or baking dish. Place the marinated chicken on top, skin side up.
  5. Roast: Roast the chicken in the preheated oven for 45–55 minutes, or until the skin is golden brown and a thermometer inserted into the thickest part of the thigh reads 165°F (74°C).
  6. Rest and Serve: Remove the chicken from the oven and let it rest for 10 minutes before carving. Garnish with fresh parsley if desired. Serve with the roasted onions and lemons.
