- 2 large flour tortillas
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese

- 1/4 cup red onion, thinly sliced
- 1/4 cup baby spinach leaves
- 1 tablespoon olive oil or butter

Instructions
- Heat a large skillet over medium heat and add half the olive oil or butter.
- Place one tortilla in the skillet. Sprinkle half of the cheddar and mozzarella cheese evenly over the tortilla.
- Add the bell pepper, mushrooms, red onion, and spinach evenly over the cheese.
- Sprinkle the remaining cheese on top of the veggies, then place the second tortilla on top to cover everything.
- Cook for 2-3 minutes, or until the bottom tortilla is golden brown and the cheese starts to melt. Carefully flip the quesadilla using a large spatula.
- Add the remaining olive oil or butter to the pan if needed. Cook the other side for another 2-3 minutes, until golden brown and the cheese is fully melted.
- Remove from the skillet and let it cool for a minute. Slice into wedges.
- Serve warm with salsa and sour cream, if desired.
