Instructions

  1. Sauté the Vegetables:
    Heat olive oil in a large skillet over medium heat. Add the onion and bell pepper. Sauté for 3-4 minutes until softened.
  2. Add Tomatoes and Spices:
    Stir in the diced tomatoes, paprika, cumin, and red pepper flakes. Cook for 5-7 minutes, stirring occasionally, until the tomatoes break down and the mixture thickens.
  3. Add the Eggs:
    Make small wells in the tomato mixture and crack the eggs into them. Cover the skillet and cook for 4-6 minutes, until the egg whites are set but yolks are still runny (or to your desired doneness).
  4. Season and Serve:
    Season with salt and black pepper. Garnish with fresh parsley. Serve hot with crusty bread for dipping.
