Ingredients

  • 2 cups cooked turkey, shredded or chopped
  • 2 cups leftover mashed potatoes
  • 1 cup frozen mixed vegetables (peas, carrots, corn, etc.)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup turkey or chicken broth
  • 1/2 cup milk
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese (optional, for topping)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet over medium heat, melt the butter. Add the chopped onion and cook until softened, about 3-4 minutes. Add the garlic and cook for 1 more minute.
  3. Sprinkle the flour over the onions and garlic, stirring constantly for 1 minute to form a roux.
  4. Gradually whisk in the turkey or chicken broth and milk. Cook, stirring, until the mixture thickens, about 2-3 minutes.
  5. Add the shredded turkey, frozen mixed vegetables, thyme, rosemary (if using), salt, and pepper. Stir to combine and heat through, about 2 minutes. Remove from heat.
  6. Spread the turkey and vegetable mixture evenly in a 2-quart baking dish.
  7. Dollop the mashed potatoes over the filling and gently spread them to cover the entire surface. If desired, use a fork to create a decorative pattern on top.
  8. Sprinkle shredded cheddar cheese over the mashed potatoes, if using.
  9. Bake for 20-25 minutes, or until the top is golden and the filling is bubbling around the edges.
  10. Let cool for 5 minutes before serving. Enjoy!
