Steak & Cheese Quesadillas

Ingredients
- 8 oz (1/2 lb) flank steak or sirloin, thinly sliced
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon chili powder (optional)
- 1/2 teaspoon garlic powder
- 1/2 small onion, thinly sliced
- 1/2 green bell pepper, thinly sliced (optional)
- 4 large flour tortillas (10-inch)
- 1 1/2 cups shredded cheddar cheese (or Mexican blend)
- 1 cup shredded mozzarella cheese
- 2 tablespoons butter, for cooking
- Sour cream, salsa, and guacamole for serving (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add the sliced steak, salt, pepper, chili powder, and garlic powder. Cook for 2–3 minutes until browned.
- Add the onion (and bell pepper, if using) to the skillet. Sauté for another 2–3 minutes until softened. Remove steak and veggies from the skillet and set aside.
- Wipe the skillet clean. Place over medium heat and add a small pat of butter.
- Place one tortilla in the skillet. Sprinkle 1/4 of the cheddar and mozzarella cheese evenly over half the tortilla. Top with 1/4 of the steak and veggie mixture. Fold the tortilla over to form a half-moon shape.
- Cook for 2–3 minutes per side, pressing gently with a spatula, until golden brown and the cheese is melted.
- Remove from skillet and repeat with remaining tortillas and filling.
- Let quesadillas cool for 1–2 minutes, then slice into wedges. Serve warm with sour cream, salsa, and guacamole if desired.
