Ingredients

  • 8 oz (1/2 lb) flank steak or sirloin, thinly sliced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon chili powder (optional)
  • 1/2 teaspoon garlic powder
  • 1/2 small onion, thinly sliced
  • 1/2 green bell pepper, thinly sliced (optional)
  • 4 large flour tortillas (10-inch)
  • 1 1/2 cups shredded cheddar cheese (or Mexican blend)
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons butter, for cooking
  • Sour cream, salsa, and guacamole for serving (optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add the sliced steak, salt, pepper, chili powder, and garlic powder. Cook for 2–3 minutes until browned.
  2. Add the onion (and bell pepper, if using) to the skillet. Sauté for another 2–3 minutes until softened. Remove steak and veggies from the skillet and set aside.
  3. Wipe the skillet clean. Place over medium heat and add a small pat of butter.
  4. Place one tortilla in the skillet. Sprinkle 1/4 of the cheddar and mozzarella cheese evenly over half the tortilla. Top with 1/4 of the steak and veggie mixture. Fold the tortilla over to form a half-moon shape.
  5. Cook for 2–3 minutes per side, pressing gently with a spatula, until golden brown and the cheese is melted.
  6. Remove from skillet and repeat with remaining tortillas and filling.
  7. Let quesadillas cool for 1–2 minutes, then slice into wedges. Serve warm with sour cream, salsa, and guacamole if desired.
