Ingredients
- 7 oz (200g) udon noodles (fresh or frozen)
- 8 oz (225g) pork (thinly sliced or ground)
- 2 tablespoons peanut butter (creamy or chunky)
- 1 ½ tablespoons soy sauce
- 1 tablespoon chili oil (plus more to taste)
- 1 tablespoon vegetable oil (for cooking)
- 2 teaspoons sugar
- 2 cloves garlic, minced
- 2 spring onions, sliced (separate white and green parts)
- 2 tablespoons water
- Salt and pepper, to taste
Instructions
- Cook the Udon Noodles:
Bring a pot of water to a boil. Add udon noodles and cook according to package instructions. Drain and set aside. - Make the Sauce:
In a small bowl, whisk together peanut butter, soy sauce, chili oil, sugar, and 2 tablespoons water until smooth. Set aside. - Cook the Pork:
Heat vegetable oil in a large skillet or wok over medium-high heat. Add the pork and cook until browned and cooked through, breaking it up if using ground pork (about 3-4 minutes). Season lightly with salt and pepper. - Add Aromatics:
Add the minced garlic and the white parts of the spring onions to the pan. Stir-fry for 30 seconds until fragrant. - Combine Everything:
Add the cooked udon noodles to the pan. Pour in the peanut sauce and toss everything together until the noodles and pork are well coated and heated through (about 1-2 minutes). Add a splash of water if the sauce is too thick. - Finish & Serve:
Remove from heat. Top with the green parts of the spring onions and an extra drizzle of chili oil if desired. Serve immediately.
