  • 1/2 cup honey
  • 2 large eggs

  • 1 tsp vanilla extract
  • 1 cup raisins

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8×8-inch baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. In a large bowl, cream the softened butter and brown sugar together until light and fluffy. Add the honey and mix well.
  4. Beat in the eggs, one at a time, then stir in the vanilla extract.
  5. Add the dry ingredients to the wet ingredients in three parts, alternating with the sour cream. Begin and end with the dry ingredients. Mix until just combined.
  6. Fold in the raisins.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 28–32 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
  10. Serve plain, dusted with powdered sugar, or with a drizzle of honey.
