They’re easy to make and perfect for breakfast, snacks, or dessert!

Ingredients

  • 1 cup (2 medium) ripe bananas, mashed
  • 1 cup (about 1 medium) apple, peeled and finely diced
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 1/2 cups old-fashioned rolled oats
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. Mix in the mashed bananas.
  5. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
  6. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  7. Stir in the oats, diced apple, and nuts (if using) until evenly distributed.
  8. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  9. Bake for 11–13 minutes, or until the edges are lightly golden and the centers look set but still soft.
  10. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Tips

  • For extra flavor, add a pinch of nutmeg or swap in whole wheat flour for half the all-purpose flour.
  • Store cookies in an airtight container for up to 4 days, or freeze for longer storage.

FAQ

  • Can I make these cookies vegan? Yes! Substitute the butter with vegan butter and the egg with a flax egg (1 tbsp ground flaxseed + 3 tbsp water).
  • Can I use quick oats? Old-fashioned oats give the best texture, but quick oats will work in a pinch.
