Ground chicken, chickpeas, tomatoes, and dried apricots are slow-cooked with warm spices for a sweet and savory dish. Ingredients
- 3 lbs ground chicken
- 2 (15 oz) cans chickpeas, drained and rinsed
- 2 (14.5 oz) cans diced tomatoes (with juices)

- 6 cloves garlic, minced
- 1 cup dried apricots, chopped
- 1 cup chicken broth
- 4 tablespoons tomato paste
- 4 tablespoons olive oil
- 2 tablespoons ground cumin
- 4 teaspoons ground coriander
- 2 teaspoons ground cinnamon
- 2 teaspoons ground ginger
- 2 teaspoons smoked paprika (or regular paprika)
- 1 teaspoon turmeric
- 1 teaspoon cayenne pepper (optional, for heat)
- 2 teaspoons salt (or to taste)
- 1 teaspoon black pepper
- 1/2 cup fresh cilantro or parsley, chopped (for garnish)
- Cooked couscous or rice, for serving
Instructions
- Brown the Ground Chicken (Optional but recommended):
Heat olive oil in a large skillet over medium heat. Add ground chicken and cook, breaking it up with a spoon, until lightly browned (about 5–7 minutes). You may need to do this in batches. Transfer to the slow cooker. - Add Remaining Ingredients:
To the slow cooker, add chickpeas, diced tomatoes, onions, garlic, dried apricots, chicken broth, tomato paste, cumin, coriander, cinnamon, ginger, paprika, turmeric, cayenne (if using), salt, and black pepper. Stir to combine. - Slow Cook:
Cover and cook on LOW for 5–6 hours or on HIGH for 2.5–3 hours, until the flavors are well blended and the sauce is thickened. - Finish and Serve:
Taste and adjust seasoning if needed. Serve hot over couscous or rice, garnished with fresh cilantro or parsley.
