Slow Cooker Cajun Chicken Alfredo Pasta

Ingredients

  • 1 1/2 pounds boneless, skinless chicken breasts
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups low-sodium chicken broth
  • 1 (15 oz) jar Alfredo sauce
  • 1 (14.5 oz) can diced tomatoes, drained
  • 8 oz penne or fettuccine pasta (uncooked)
  • 1 cup heavy cream
  • 1 cup shredded Parmesan cheese
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Place chicken breasts in the bottom of the slow cooker. Sprinkle with Cajun seasoning, garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Pour chicken broth and Alfredo sauce over the chicken. Add diced tomatoes.
  3. Cover and cook on low for 3–4 hours, until chicken is cooked through and tender.
  4. Remove chicken, shred with two forks, and return to the slow cooker.
  5. Stir in uncooked pasta and heavy cream. Cover and cook on high for 25–35 minutes, stirring once or twice, until pasta is tender.
  6. Stir in Parmesan cheese until melted and creamy.
  7. Serve hot, garnished with fresh parsley.
