Ingredients
- 1 1/2 pounds boneless, skinless chicken breasts
- 1 tablespoon Cajun seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups low-sodium chicken broth
- 1 (15 oz) jar Alfredo sauce
- 1 (14.5 oz) can diced tomatoes, drained
- 8 oz penne or fettuccine pasta (uncooked)
- 1 cup heavy cream
- 1 cup shredded Parmesan cheese
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Place chicken breasts in the bottom of the slow cooker. Sprinkle with Cajun seasoning, garlic powder, onion powder, smoked paprika, salt, and pepper.
- Pour chicken broth and Alfredo sauce over the chicken. Add diced tomatoes.
- Cover and cook on low for 3–4 hours, until chicken is cooked through and tender.
- Remove chicken, shred with two forks, and return to the slow cooker.
- Stir in uncooked pasta and heavy cream. Cover and cook on high for 25–35 minutes, stirring once or twice, until pasta is tender.
- Stir in Parmesan cheese until melted and creamy.
- Serve hot, garnished with fresh parsley.
