Shipwreck Pasta Dinner – One Pan Meal

Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (any color)
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 (8 oz) can tomato sauce
  • 2 cups beef broth
  • 2 cups uncooked rotini or penne pasta
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. In a large skillet or Dutch oven, cook the ground beef over medium heat until browned. Drain excess fat.
  2. Add the onion, garlic, and bell pepper. Cook for 3-4 minutes until softened.
  3. Stir in the diced tomatoes (with juice), tomato sauce, beef broth, pasta, Italian seasoning, paprika, salt, and pepper.
  4. Bring to a boil, then reduce heat to a simmer. Cover and cook for 15-18 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
  5. Sprinkle the shredded cheddar cheese over the top. Cover and let sit for 2-3 minutes until the cheese is melted.
  6. Garnish with chopped parsley if desired. Serve hot.
