  • 1 package (12–16 oz) meatballs (fully cooked or raw; chicken, turkey, beef, or plant-based)
  • 1 large red onion, cut into wedges
  • 2 bell peppers (any color), sliced
  • 2 medium zucchini, sliced into half-moons
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 3 tbsp olive oil
  • 2 tsp garam masala
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/2 tsp chili powder (optional, for heat)
  • 1/2 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper

For the Cucumber Yogurt Sauce

  • 1 cup plain Greek yogurt
  • 1/2 cup cucumber, finely diced
  • 2 tbsp fresh cilantro, chopped
  • 1 tbsp fresh mint, chopped (optional)
  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • Juice of 1/2 lemon

For the Lentils

  • 2 packs (about 10 oz each) Tasty Bite Indian lentils (Madras Lentils, Dal Tadka, or your favorite)

Instructions

1. Prepare the Sheet Pan Dinner

  1. Preheat oven to 425°F (220°C). Line a large sheet pan with parchment paper or foil.
  2. In a large bowl, toss tofu cubes, onion wedges, bell peppers, zucchini, and chickpeas with olive oil, garam masala, cumin, coriander, turmeric, chili powder, smoked paprika, salt, and black pepper.
  3. Spread the tofu and veggie mixture evenly on the prepared sheet pan.
  4. If using fully cooked meatballs: Nestle them among the veggies and tofu. Roast for 20–25 minutes, stirring veggies halfway through, until everything is golden and heated through.
  5. If using raw meatballs: Nestle them among the veggies and tofu. Roast for 25–30 minutes, stirring veggies halfway through, until meatballs are cooked through (internal temp 165°F for poultry, 160°F for beef/pork) and veggies are golden and tender.

2. Make the Cucumber Yogurt Sauce

  1. In a bowl, combine Greek yogurt, cucumber, cilantro, mint (if using), cumin, salt, and lemon juice. Mix well and refrigerate until ready to serve.

3. Heat the Lentils

  1. Heat the Tasty Bite lentils according to package instructions (usually microwave for 1 minute or simmer in a saucepan for 3–4 minutes).

4. Serve

  1. Serve the roasted sheet pan dinner with a side of warm lentils and a generous dollop of cucumber yogurt sauce.

Tips

  • Use any flavor or type of meatballs you like—chicken, turkey, beef, pork, or vegetarian.
  • If using raw meatballs, check for doneness with a meat thermometer.
  • Swap in other veggies if you prefer (cauliflower, carrots, or eggplant work well).
  • Serve with naan or basmati rice for a heartier meal.
