This Savory Breakfast Quesadilla is a quick and delicious way to start your day! Crispy golden tortillas are filled with cheesy scrambled eggs, sautéed veggies, and your choice of ham or mushrooms. Served with creamy avocado and fresh salsa, it’s a breakfast everyone will love.

Ingredients

  • 2 large flour tortillas
  • 3 large eggs
  • 1/4 cup milk
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced bell pepper (any color)
  • 1/4 cup diced onion
  • 1/4 cup diced ham or mushrooms (optional)
  • 1 tablespoon butter
  • Salt and pepper, to taste
  • 1/2 avocado, sliced (for serving)
  • 1/4 cup salsa (for serving)

Instructions

Make the Egg Filling:

  1. Crack eggs into a bowl. Add milk, salt, and pepper. Whisk well.
  2. Heat butter in a skillet over medium heat. Add bell pepper, onion, and ham or mushrooms if using. Cook for 2-3 minutes until soft.
  3. Pour in the eggs. Stir gently until just cooked. Take off the heat.

Make the Quesadilla:

  1. Wipe the skillet clean. Place one tortilla in the pan over medium heat.
  2. Sprinkle half the cheese on one side of the tortilla. Add the egg mixture on top. Sprinkle the rest of the cheese over the eggs. Fold the tortilla in half.
  3. Cook for 2-3 minutes per side until golden and the cheese melts.

To Serve:

  1. Slice into wedges. Serve with avocado and salsa on the side. Enjoy!
