Sausage & Spinach Breakfast Strata is a hearty, make-ahead breakfast casserole layered with savory sausage, fresh spinach, bread, and melty cheese. Perfect for family brunches or meal prep, this dish is easy to assemble and delivers big flavor with minimal effort!

Ingredients

  • 1 lb breakfast sausage (pork or turkey), casings removed
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 cups fresh spinach, roughly chopped
  • 6 cups day-old bread, cubed (French or Italian bread works well)
  • 2 cups shredded cheddar cheese (or a mix of cheddar and mozzarella)
  • 8 large eggs
  • 2 1/2 cups whole milk
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg (optional)
  • Butter or nonstick spray (for greasing the baking dish)

Instructions

  1. Heat oven to 350°F. Grease a 9×13-inch baking dish.
  2. Cook sausage in a skillet until browned. Remove and set aside.
  3. In the same skillet, cook onion until soft. Add spinach and cook until wilted.
  4. In a big bowl, whisk eggs, milk, mustard, salt, pepper, and nutmeg.
  5. Layer half the bread in the dish. Add half the sausage, spinach mix, and cheese. Repeat layers.
  6. Pour egg mix over everything. Press bread down gently.
  7. Cover and chill for 1 hour or overnight.
  8. Bake covered for 30 minutes. Uncover and bake 20-25 minutes more, until golden and set.
  9. Cool 10 minutes, then slice and serve.
