Instructions

  1. In a large bowl, whisk together flour, salt, and yeast. Add warm water and stir until a shaggy dough forms.
  2. Cover bowl tightly with plastic wrap and let rise at room temperature for 12-18 hours, until dough is bubbly and doubled in size.
  3. Turn dough out onto a well-floured surface. With floured hands, shape into a ball. Let rest for 30 minutes.
  4. Meanwhile, place a Dutch oven (with lid) in the oven and preheat to 450°F (230°C).
  5. Carefully remove hot Dutch oven. Place dough on a piece of parchment paper and lower into the pot. Cover with lid.
  6. Bake for 30 minutes covered, then remove lid and bake for 12-15 minutes more, until golden and crusty.
  7. Cool on a wire rack before slicing.
