Roasted Gnocchi with Cherry Tomatoes and Mozzarella

Ingredients

  • 1 pound refrigerated gnocchi (about two packages)
  • 2 tablespoons olive oil
  • 2 cups cherry tomatoes, halved
  • 4 ounces pancetta, diced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 1 can (14 ounces) crushed tomatoes
  • Salt and pepper to taste
  • 8 ounces fresh mozzarella, sliced
  • Fresh basil leaves, for garnish

Instructions

  1. Prepare the Gnocchi: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the gnocchi and cook until golden brown and crispy on the outside, about 5-7 minutes. Remove from the skillet and set aside.
  2. Cook the Pancetta: In the same skillet, add the remaining tablespoon of olive oil. Add the diced pancetta and cook until crispy.
  3. Add Aromatics: Add the chopped onion and cook until translucent. Stir in the minced garlic and red pepper flakes, cooking for another minute until fragrant.
