Ingredients
- 1 pound refrigerated gnocchi (about two packages)
- 2 tablespoons olive oil
- 2 cups cherry tomatoes, halved
- 4 ounces pancetta, diced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- 1 can (14 ounces) crushed tomatoes
- Salt and pepper to taste
- 8 ounces fresh mozzarella, sliced
- Fresh basil leaves, for garnish
Instructions
- Prepare the Gnocchi: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the gnocchi and cook until golden brown and crispy on the outside, about 5-7 minutes. Remove from the skillet and set aside.
- Cook the Pancetta: In the same skillet, add the remaining tablespoon of olive oil. Add the diced pancetta and cook until crispy.
- Add Aromatics: Add the chopped onion and cook until translucent. Stir in the minced garlic and red pepper flakes, cooking for another minute until fragrant.
- Make the Sauce: Add the crushed tomatoes to the skillet. Season with salt and pepper. Let the sauce simmer for about 10 minutes, allowing the flavors to meld.
- Combine Ingredients: Return the gnocchi to the skillet, along with the halved cherry tomatoes. Stir to combine and let cook for another 2-3 minutes.

- Broil: Place the skillet under the broiler for 2-3 minutes, or until the mozzarella is melted and bubbly.
