Ingredients
- 1/4 cup chia seeds
- 1 cup unsweetened almond milk (or milk of choice)
- 1/2 cup fresh or frozen raspberries (or strawberries, or a mix)
- 1 tablespoon honey or maple syrup (optional, adjust to taste)
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon (optional)
- Pinch of salt
- Fresh berries, pomegranate seeds, or sliced strawberries for topping (optional)
Instructions
- In a blender, combine the raspberries (or other red berries), almond milk, honey or maple syrup, vanilla extract, cinnamon, and a pinch of salt. Blend until smooth and vibrant red.
- Pour the berry mixture into a bowl or jar. Add the chia seeds and stir well to combine.
- Let the mixture sit for 5 minutes, then stir again to prevent the chia seeds from clumping.
- Cover and refrigerate for at least 2 hours, or overnight, until the pudding thickens to a creamy, pudding-like consistency.
- Before serving, give the pudding a good stir. Spoon into bowls or jars and top with fresh berries, pomegranate seeds, or sliced strawberries if desired.
