In a heavy-bottomed pot or Dutch oven, heat the extra virgin olive oil over medium heat. Add the finely chopped yellow onion and sauté for 5-7 minutes, or until softened and translucent, stirring occasionally.

Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for 25-30 minutes, or until the farro is tender yet still has a slight chew (al dente) and most of the liquid has been absorbed. Cooking time may vary slightly depending on the type of farro (pearled farro cooks faster than whole farro).
