  • 6 tablespoon unsalted butter
  • 6 tablespoon all-purpose flour
  • 3 cups whole milk, warm
  • 2 large egg yolks
  • 0.5 cup Kefalotyri or Parmesan cheese, grated
  • 0.25 teaspoon ground nutmeg

  • 0.25 cup Kefalotyri or Parmesan cheese, grated, for topping

Instructions

    Prepare the Pasta: Bring a large pot of salted water to a rolling boil. Add the bucatini or macaroni and cook according to package directions until al dente. Drain well, drizzle with 1 tablespoon olive oil to prevent sticking, and set aside.
