Ingredients

  • 14.5 oz crushed tomatoes

  • 0.5 teaspoon cinnamon, ground
  • 0.25 teaspoon nutmeg, ground
  • 1 bay leaf
  • 1 teaspoon dried oregano
  • 4 tablespoon unsalted butter
  • 4 tablespoon all-purpose flour
  • 3 cup whole milk, warmed
  • 2 egg yolks, large
  • 0.5 teaspoon nutmeg, freshly grated
  • 0.5 cup Kefalotyri or Parmesan cheese, grated
  • to taste white pepper
  • 2 tablespoon fine breadcrumbs

Instructions

    **Prepare the Eggplant and Potatoes:** Slice eggplants into 1/4-inch thick rounds. Lay them on paper towels, sprinkle generously with salt, and let them sit for 30-45 minutes to draw out moisture and bitterness. Pat them thoroughly dry with paper towels.
