Ingredients

  • 3 cup all-purpose flour, plus more for dusting
  • 1 cup warm water (105-115°F / 40-46°C)
  • 1 teaspoon active dry yeast
  • 1 teaspoon granulated sugar
  • 1 teaspoon salt
  • 2 tablespoon olive oil
  • 1.5 lb Imeruli cheese (or a blend of 12 oz shredded mozzarella, 4 oz crumbled feta, and 8 oz full-fat ricotta or cottage cheese)
  • 2 tablespoon unsalted butter, softened
  • 4 large eggs
  • 4 tablespoon unsalted butter, cut into small pats, for serving

Instructions

    In a large bowl, combine the warm water, yeast, and sugar. Stir gently and let it sit for 5-10 minutes until foamy, indicating the yeast is active.
