Tofu Skewers with Peanut Sauce
Delicious and easy tofu skewers, marinated and grilled to perfection. Served with a flavorful peanut sauce, these skewers are perfect as an appetizer or a light main course.
Ingredients
- •1 lb Extra-firm tofu (pressed to remove excess water, then cubed)
- •1 piece Red bell pepper (cut into 1-inch pieces)
- •1 piece Zucchini (cut into 1-inch pieces)
- •1 piece Red onion (cut into 1-inch pieces)
- •1/4 cup Soy sauce
- •1 tbsp Sesame oil
- •1 tbsp Maple syrup
- •1 tbsp Rice vinegar
- •2 cloves Garlic (minced)
- •1 tsp Ginger (grated)
- •1/4 cup Peanut butter
- •2 tbsp Lime juice
- •2-4 tbsp Water (to adjust consistency)
- •1 tsp Sriracha (or to taste)
- •8 piece Skewers (wooden or metal)
Instructions

In a bowl, whisk together soy sauce, sesame oil, maple syrup, rice vinegar, minced garlic, and grated ginger. Add the cubed tofu and let it marinate for at least 15 minutes (or up to 30 minutes in the refrigerator).
Time: 15 min - 2.
While the tofu is marinating, prepare the peanut sauce. In a separate bowl, whisk together peanut butter, lime juice, water (start with 2 tbsp and add more until desired consistency is reached), and Sriracha.
Time: 5 min - 3.
Thread the marinated tofu, red bell pepper, zucchini, and red onion onto skewers.
Time: 10 min - 4.
Preheat your grill to medium heat. Place the skewers on the grill and cook for about 10-12 minutes, flipping occasionally, until the tofu is golden brown and the vegetables are tender.
Time: 12 min - 5.
Remove the skewers from the grill and serve immediately with the peanut sauce.

Tips
- 💡For best results, press the tofu to remove as much water as possible. This will help it absorb the marinade better and get a firmer texture when grilled.
- 💡You can use other vegetables like cherry tomatoes, mushrooms, or pineapple for the skewers.
- 💡If you don't have a grill, you can bake the skewers in a preheated oven at 400°F (200°C) for about 20-25 minutes, flipping halfway through.
