  • 0.5 cup red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 0.3 cup red onion, very thinly sliced
  • 0.3 cup fresh cilantro, chopped
  • 2 tablespoon fresh mint, chopped
  • 0.3 cup roasted peanuts, chopped, for garnish
