  • 250 g Dried Plums (Alubukhara) (washed thoroughly)
  • 2 cup Water (warm, for soaking plums)
  • 1.5 cup Sugar (or 1 cup Jaggery for an earthier profile)
  • 2 tbsp White Vinegar (or fresh lemon juice)
  • 0.5 tsp Red Chili flakes
  • 0.5 tsp Black Salt (Kala Namak)
  • 0.25 tsp Ginger powder (Sonth)
  • 0.5 tsp Roasted Cumin powder
  • 1 pinch Salt
  • 2 tbsp Dried Melon seeds (Char Magaz)
  • 10-12 piece Blanched Almonds (peeled and halved)

Instructions

    Soak the washed dried plums in 2 cups of warm water for at least 1-2 hours until softened. Once soaked, place the plums along with their soaking water into a heavy-bottomed saucepan.

    Bring the plums to a gentle boil over medium heat. Reduce heat to low-medium, cover, and simmer for 10-15 minutes. The plums should swell and become tender, almost falling off the pit, but ideally remain whole.

    Add the sugar (or jaggery) to the pot. Stir gently until dissolved. Continue to simmer uncovered, allowing the water to evaporate and the natural pectin from the plums to react with the sugar, forming a viscous, honey-like syrup. This will take approximately 8-10 minutes.
