Ingredients

- •4 cup kale, stems removed, packed
- •2 cup arugula, packed
- •2 medium green apple (such as Granny Smith), cored and quartered
- •2 inch piece fresh ginger, peeled
- •1 large lemon, juiced
- •0.5 cup filtered water
- •2 tablespoon agave nectar or maple syrup

Instructions

Thoroughly wash all produce (cucumber, kale, arugula, green apple, ginger). Remove the tough stems from the kale leaves. Core and quarter the green apples. Peel the fresh ginger.

If using a juicer: Process the cucumber, kale, arugula, green apples, and ginger through your juicer according to the manufacturer's instructions. Collect the fresh juice in a large pitcher.

If using a high-speed blender: Add the cucumber, kale, arugula, green apples, ginger, and filtered water to the blender. Blend on high speed until completely smooth, about 1-2 minutes. Place a fine-mesh sieve or nut milk bag over a large bowl or pitcher and pour the blended mixture through to separate the pulp from the juice. Press down on the pulp to extract as much liquid as possible.

Add the freshly squeezed lemon juice and agave nectar (or maple syrup) to the collected green juice. Stir well to combine.

Taste the elixir and adjust sweetness or tartness as desired. You may add more agave nectar for sweetness or a splash more lemon juice for tartness.
