Ingredients

  • 1 large English cucumber, washed and roughly chopped
  • 4 cup kale, stems removed, packed
  • 2 cup arugula, packed
  • 2 medium green apple (such as Granny Smith), cored and quartered
  • 2 inch piece fresh ginger, peeled
  • 1 large lemon, juiced
  • 0.5 cup filtered water
  • 2 tablespoon agave nectar or maple syrup
  • for serving ice

Instructions

  1. 1.

Thoroughly wash all produce (cucumber, kale, arugula, green apple, ginger). Remove the tough stems from the kale leaves. Core and quarter the green apples. Peel the fresh ginger.

  2. 2.

If using a juicer: Process the cucumber, kale, arugula, green apples, and ginger through your juicer according to the manufacturer's instructions. Collect the fresh juice in a large pitcher.

  3. 3.

If using a high-speed blender: Add the cucumber, kale, arugula, green apples, ginger, and filtered water to the blender. Blend on high speed until completely smooth, about 1-2 minutes. Place a fine-mesh sieve or nut milk bag over a large bowl or pitcher and pour the blended mixture through to separate the pulp from the juice. Press down on the pulp to extract as much liquid as possible.

  4. 4.

Add the freshly squeezed lemon juice and agave nectar (or maple syrup) to the collected green juice. Stir well to combine.

  5. 5.

Taste the elixir and adjust sweetness or tartness as desired. You may add more agave nectar for sweetness or a splash more lemon juice for tartness.

  6. 6.

Serve immediately over ice in tall glasses. Garnish with a lemon slice or a small kale leaf if desired.

Tips

  • 💡For the best flavor and nutrient content, use organic produce whenever possible.
  • 💡Adjust the amount of ginger to your liking; use less for a milder flavor or more for a spicier kick.
  • 💡If you prefer a sweeter juice, increase the amount of agave nectar or maple syrup. For a tarter juice, add an extra squeeze of lemon.
  • 💡While best enjoyed fresh, you can store any leftover juice in an airtight container in the refrigerator for up to 24 hours. Some nutrient loss may occur over time.
  • 💡To make the blending process easier in a blender, you may need to add a little more water, especially if your produce is very fibrous.
